One of the first things I began doing when I started to “Get Your Fats Straight here” was to make my own salad dressings. I love salads. I love salad dressings even more. Store-bought dressings are made with inferior oils that cause inflammation and for me lethargy and exhaustion.
Homemade dressings are great for the salads that I love, and ones like this Italian Salad Dressing serve double duty. It makes a great marinade for things like grilled chicken or lamb. When it’s eaten raw on salads it’s loaded with beneficial enzymes that help us digest our food and boost our immunity. Yay for truly healthy salad dressing!
I also appreciate how easy it is to make and it stores very easily in a glass jar in my fridge. When I’m ready to use it, I simply give it a good shake or a whirl with a fork.
Ingredients:
1/2c raw apple cider vinegar (here or in health food stores under the brand, Tree of Life) or squeeze some lemons for 1/2 cup of the juice
1/2 t + 1/4 t mineral rich salt (here, here, here)
2t raw honey (can be found in health food stores, farmer’s markets and daily farm markets)
1t of your favorite organic Italian herb blend (like this or this)
3/4c real olive oil
Directions:
Put everything but the real olive oil in a bowl or glass jar and mix or shake well, add the oil last and mix or shake well. Enjoy!
