I fell in love with mango lassis at an indian restaurant. Once I started making milk kefir on a regular basis, I knew I had to try a mango lassi with milk kefir instead of yogurt. It didn’t disappoint!
This recipe is a nice treat for my family, but if we want it as a light meal, I double it! I currently buy most of my mango frozen and organic at Costco. You can read about real food and Costco here.
Ingredients (makes 6 average servings)
6 cups of frozen or chopped mango (frozen will make it more like a soft serve ice cream)
5 cups milk kefir (instructions here)
3T coconut sugar (tastes like brown sugar, not coconuts)
1/2 t vanilla extract
Instructions:
Place all ingredients in a high-powered blender. I use this one (here).
Run it at the highest speed. For the Blendtec, I used the ice cream setting.
This is right after I ran it through the blender. If you want it less ice cream (soft serve) like, let it sit for 7-10 minutes, then serve.
